500gm lamb, diced
¼ C sundried apricots, cut in half
1 tsp ground cumin
½ C beef/chicken stock
1 tsp sea salt
1 tsp ground black pepper
4 carrots, peeled and chopped
2 cloves garlic, minced
1 onion, chopped
2 Tbs tomato paste
1 tsp raw sugar
1 head of cauliflower
1 Tbs fresh basil, chopped
1 Tbs olive oil
1 Tbs butter

Heat olive in a fry pan and add the lamb. Cook until just browned. Place the lamb and any cooking juices into the slow cooker. Add the spices, stock, garlic, onion, tomato paste, sugar and carrots. Chop the cauliflower and add ¼ of it to the slow cooker. Place the lid on the slow cooker and cook for around 8 hours.

When the lamb is done, place the remainder of the cauliflower into the food processor and process until it becomes a rice-like consistency. Heat the butter in a fry pan and add the cauliflower. Stir the cauliflower so that the butter coats it and cook it for a few minutes until it is warm.

Stir the chopped basil through the cauliflower rice. Serve the tangine with a side of cauliflower rice. Serves 2, with left over’s.
