Dukkah Lamb Cutlets with Apple Slaw
400gm lamb cutlets
2 Tbs sesame seeds
¼ C pistachio nuts
1 tsp ground coriander
1 tsp ground cumin
pinch of freshly ground black pepper
pinch of sea salt
1 green apple
¼ red cabbage
1 Tbs olive oil
1 tsp apple cider vinegar
1 tsp lemon juice
A couple of drops of stevia (natural sweetener)
Place the sesame seeds, pistachio nuts, coriander, cumin, salt and pepper in a food processor and blend until it is a course powder.
Pre heat the oven to 180°. Line a baking tray with grease proof paper and place the lamb cutlets on the paper. Press the dukkah mix onto the top of the lamb cutlets.
While the lamb is cooking grate the apple and cabbage. Toss the apple and cabbage together. Is a small bowl mix the olive oil, vinegar, lemon juice and stevia. Stir this dressing through the coleslaw.
Once the lamb is cooked to your liking, remove it from the oven and serve with a side of apple slaw.
