Honey Roasted Salmon
2 salmon fillets
1 bunch of Broccolini
1 purple carrot, peeled and grated
1 tsp sesame seeds
1 Tbs sesame oil
1 Tbs raw honey
Pre heat the oven to 180°. Add a little water to the honey so that it is just a little runny. Brush the honey over the salmon. Place the salmon on a lined baking tray and roast it in the oven for around 15 minutes, or until the salmon is cooked through.
Bring a saucepan of water to the boil. Trim the ends off the Broccolini stalks. Blanch the Broccolini in the boiling water for around 3 minutes, or until it is just tender.
On the serving plates place the cooked salmon, Broccolini and grated carrot. Sprinkle the sesame seeds over the salmon.
