Lamb Cutlets and Cauliflower Mash from the fertility food revolution meal plan

Lamb Cutlets and Cauliflower Mash

6 Lamb Cutlets
½ Head Cauliflower
½ C Peas, fresh or frozen
1 Tbs Organic Butter

Mint Sauce
¼ C Fresh Mint
1 Tbs Extra Virgin Olive Oil
1 Tbs Water

Preheat grill. Season cutlets with salt and pepper. Allow to rest at room temperature for 5-10 minutes then place cutlets under the grill and cook to your liking.

Fill a medium sized saucepan with water on put on the stove and bring to the boil. Remove stems from cauliflower and place florets in boiling water.

Cook for 5 minutes. Add peas (if frozen) into boiling water and cook for a further 2 minutes. Even healthier alternative is to steam these vegetables until tender.

Place cooked cauliflower in food processor with butter and season with salt and pepper. Quickly blend until it becomes a smooth texture.

Serve cutlets on a bed of cauliflower mash and peas. Drizzle with mint sauce.
