Moroccan Lamb w. Quinoa Salad
Moroccan Lamb Quinoa Salad
350gm diced lamb
½ C quinoa, rinsed well
2 tsp Moroccan spice mix
100gm mixed salad leaves
1 onion, cut into wedges and layers separated
1 Tbs olive oil
50gm cherry tomatoes, quartered
Place the quinoa in a saucepan and cover with 1 C of water. Bring the water to the boil, then cover and reduce the heat to a simmer. Cook the quinoa for around 12 minutes, or until the water is absorbed.
Heat olive oil in a fry pan. Add the onions and cook for 5 minutes until they start to nearly caramelize. Add the lamb and season with the spice mix. Cook the lamb until it is cooked through.
In a large serving bowl toss together the salad ingredients, lamb, onion and quinoa. Drizzle any cooking juices over the salad.
This salad can be enjoyed warm or cold.
