Rustic Rogan Josh with Cauli Rice
350gm lamb, diced
¾ C coconut milk
½ head cauliflower
1 Tbs coconut oil
1 bay leaf
¼ C fresh coriander
1 tsp cinnamon
½ tsp cloves
1 tsp green cardamon pods
½ -1 tsp red chilli flakes (to suit taste)
¼ C tomato paste
1 onion, diced
1 clove garlic
1 tsp fresh ginger, grated
1 Tbs cashew nut butter
Heat the coconut oil in a deep fry pan. Add the spices and cook for a minute until fragrant. Add the onion and sauté for 3 minutes.
Add the diced lamb and cook until it is brown.
Combine the coconut milk, tomato paste and coconut butter. Pour this liquid into the fry pan.
Bring the heat to a simmer and cook the dish for around 20 minutes, or until the lamb is cooked through and tender. Remove the bay leaf and cardamom pods.
Meanwhile, roughly chop the cauliflower and place it in the food processor. Pulse it quickly until it forms rice like texture.
In a separate fry pan add a little more coconut oil. Add the cauliflower and stir it well so that the oil coats it. Season it with sea salt and pepper. Continually stir the cauliflower and cook
for a couple of minutes until it is warmed through and just tender.
Finely chop the coriander, stir half of it through the rice and save the rest for garnishing.
Serve the lamb on a bed of cauliflower rice.
