Sausage with Red Capsicum and Onion from the fertility food revolution meal plan

Sausage with Red Capsicum and Onion

4 organic sausages
1 red capsicum
1 red onion
1 small zucchini
1 green capsicum
3 tomatoes, finely chopped
2 Tbs tomato paste
2 Tbs fresh basil

Pre heat the oven to 180°. Roughly chop the onion, capsicum and zucchini.

Place the sausages in a casserole dish and top with the chopped onion, capsicum and zucchini.

Pour the chopped tomatoes over the top of everything and mix through the tomato paste.

Sprinkle with half of the basil leaves and season the casserole with a little freshly ground black pepper.

Place a lid on the casserole dish and place it in the oven. Cook the casserole for around 30 minutes, or until the sausages are cooked through and the vegetables are nice and soft.

Give the mixture a quick stir a couple of times during cooking to ensure that the juices keep everything moist.

Serve the sausages topped with the vegetables and drizzle a little of the cooking liquid over everything.
