Sweet Potato Chicken Spinach Patties_Fertility Food Revolution

Sweet Potato Chicken Spinach Patties


2 shallots
½ medium sweet potato, peeled and finely diced
2 ½ C spinach
250gm chicken breasts, diced
½ tsp sea salt
1 clove garlic
1 tsp paprika
1 tsp Dijon mustard
1 Tbs fresh rosemary, chopped
1 Tbs fresh basil, chopped
1 egg
1 Tbs coconut flour

1 tomato, diced
50gm baby spinach leaves
1 cucumber, diced

Heat fry pan with a little olive oil. Add the chopped shallots and cook until just tender. Add spinach and cook until wilted. Set aside.

Add chicken and pulse in a food processor until ground. Place chicken in a large bowl and add the salt, ginger, paprika, mustard, rosemary, basil, egg, coconut flour and sweet potato. Mix together until well combined. Cover bowl with plastic wrap and refrigerate for up to 4 hours.

Divide chicken mixture into 6 evenly sized patties. Coat a large fry pan with a little coconut oil. Add the patties and cook until they form a golden crust forms. Flip the patties and cook on the other side until the patty is cooked through.

Toss together salad ingredients and serve with the patties.

Serves 2, with left over’s for tomorrows lunch.
